A smoker is still an unfamiliar concept at Franziska’s place, but let’s be honest: The combination of fire, embers, a touch of creativity, and high-quality ingredients brings the best dishes to the table. We grill every Friday, and this year we’ve significantly refined Franziska’s grilling experience: We’ve deliberately moved away from the grill buffet because we believe our dishes and the high-quality meat from Pinzgau deserve the attention that can be easily lost on an overcrowded plate.
